Setting up an Apple Watch and won’t connect to phone. Watch app also says that the update I’m trying to do can’t happen because I’m not connected to the internet but I am

Trying connect a new Apple Watch device to my iPhone and it’s saying I need to complete an update on the watch before getting any further. I have attempted to do this update 5+ times now and each time my phone comes up with a message saying “Unable to verify Update The watchos update couldn’t be verified because you are not connected to the internet”. However my phone is connected to the internet and stays connected.

any suggestions as to what I can do please?
