Is it possible to delete or block automatic calendar “holidays” that are not of interest to our personal use, either in our IMacs or iPhones?

One thing to try is to disable holiday calendars. Open the Calendar app ➡️ Calendars (Bottom): Uncheck any Calendars that are selected and titled as Holidays in The US or US Holidays etc.
