The only place to increase the overall iOS/iPadOS UI font size is in the Settings app under the Display & Brightness panel, Text size panel and the Bold Test panel.
The dynamic text size feature ONLY works with apps that are coded to use that feature.
If you are using the Yahoo Mail app, this iOS/iPadOS UI feature may not work with the Yahoo Mail app,
Within the Yahoo Mail app, you could look for settings, within the Yahoo Mail app, for any type of text customisation.
