Custom email domain - how do I change the account messages are sent from?

So I have my custom email domain and spiffy new email address all set up. I can send mail to it, and it works fine.

The only problem is that if I reply to a message that is sent to the email address with the custom domain, the response comes from my iCloud.com account.

I found some instructions on here to change that via iCloud.com, but the instructions appear to be out of date.

On iOS go to Settings > Your Name > iCloud > iCloud Mail > iCloud Mail Settings. In the ‘iCloud Account Information” section there’s an option to choose your default address.

On iCloud.com go to iCloud > Mail > Settings (above your folders) > Composing and you’ll be able to choose the default account.
