Apple Mail app will not let me edit a draft
When I go back to a draft mail I cannot edit or add to it. There is no edit button that I can see. I'm using a late 2013 MacBook Pro running BigSur that is kept up to date.
Any thoughts?

Yes.
Have just created a Test e-mail in Apple Mail and Saved it in Drafts folder as illustrated in First image below.
I Double Click the Message in the Drafts folder and a New Window appears with the Message open - see second image below
I can continue to type whatever I want and then either Save Again or once completed Send it.
In effect - there is no Edit function presented as such but reopening the Draft does allow editing
