Can I use and change to different colours on a spreadsheet. Trying to set up a running log.

Have you had a look at the 'Running Log' template at File > New in the menu? It may save you from having to reinvent the wheel.😀

As for colors, go in your menu to Help > Numbers Help and search for color. There are many ways, depending on what you are trying to do.
