You can delete the Apple Music app like any other app. click here ➡️ Remove apps from iPhone - Apple Support

Deleting the app will not cancel the subscription however.

You can also cancel the subscription for it if you have one by following the steps here ➡️ If you want to cancel a subscription from Apple - Apple Support
