the text appears in messages, websearches, email body

If you don't want your iPhone to dictate when you type, disable the feature here:
Settings → Accessibility → Spoken Content → Typing Feedback
Disable these features:
- Characters
- Character Hints
- Speak Words
- Speak Auto-Text
- Hold two Speak Predictions
Also go to Settings → Accessibility → Spoken Content
Disable Speak Selection and Speak Screen
