How do I transfer some apps, some docs,
pics, videos but not all to new mini from mid 2015 MBP?
Does the Migration Assistant do that or is there another way?

Migration Assistant does have the ability to be selective. Take a look. You do not have to commit.
Suggest you download fresh copies of 3rd-party apps.
