Deleting emails
When I delete an email on my ipad it deletes it from my iPhone. But when I delete from the phone it doesn’t delete from the ipad?? Why?

Are the mail accounts on your iPad and iPhone both using IMAP, or is one or other using POP3. Unless both are using IMAP, you may see the issue that you describe.
If you lack the means to establish the mail protocol being used, deleting and then re-adding the Mail account on both devices should clear the problem.
To delete a mail account:
Settings > Mail > Accounts > [Your mail account] > Delete Account
