The information is accurate and current. You're conflating two sets of instructions. You can edit the watch face by pressing and holding the watch face (on the watch). Or, you can edit the face through the Watch app on your phone. Tap on the Watch app to open it, then tap on "My Faces" at the top of the page. Pressing and holding the Watch app will get you what you saw. Just tap.
