As long as you have a backup from the old phone, you can transfer the data to the new phone that way. You will not be able to use Quick Start, but you will able to use your backup to transfer the data. See this for help.

Do you still have access to this old iPhone's data? If not, then frankly, there is nothing you can do about it.
