Battery charging
Does the charger or phone itself sense when to stop charging?

Hmmm, a sales associate at the Apple Store in Palo Alto told me that it was the charger that sensed when to stop charging, not the iPhone. I guess some retraining is needed there and possibly at other Apple stores. Hopefully this misinformation was not given to increase new charger sales.
Thank you for clearing this up for me & others.

The "charger" is actually in the phone, a fact that surprises many users. It controls the current available from the power supply adapter.
It is impossible for the iPhone to overcharge.
