Cannot Restore Yesterday's Version of a File

I use Time Machine to back up my MacBook Pro M1 hourly, alternately to one or the other of my two 8TB Oyen Digital USB-C drives. Yet when I browse the backups of a file, I'm presented with three choices, none of which are older than the original. ALL the rest of the backups going back 8 months are GRAYED OUT.

Have I been using Time Machine for nothing? Is it a matter of waiting a little longer than 30 minutes?

What's going on?

MacBook Pro 13″, macOS 11.7

Depending on the program used to create the files, you may have the "Revert To" option in the File menu to revert to a previous version. Make a copy of your current version to avoid data being overwritten.
