I changed my Apple ID so that it uses a different email address but when I go to my Mac book I get a message to say my Mac can’t connect to iCloud because if a problem with the old email address. How do I fix it because when I go to Apple ID preferences I can’t sign out or do anything.

I am not able to sign out, it just goes back to the system preferences overview page.
Any restrictions set up in the settings for Screen Time, that may prevent those changes?
Can you sign out of the AppStore?
