I purchased an apple iPad Air 5th gen 3 months ago. I wasn't aware of the student offer during that time, although I have been a student for some time. Is there any way to request the gift card now?

If purchased directly from Apple, you generally have 14-days within which Apple will unconditionally accept return of an undamaged device for exchange or refund. This opportunity can sometimes be helpful in being able to return for refund - and then make a new purchase with benefit of a discount where available. Unfortunately, you are well beyond this opportunity.
