Older versions of Mac Mail used to show mailbox folder in the search bar. In updated versions, this has disappeared? Is there are a way I can tweak something in settings and have this back? I create and manage MANY folders and subfolders in the inbox and this function was very valuable.
As soon as you start typing in the search bar (magnifying glass) a bolded "Search: All" *should* slide out into view just under the toolbar to the left. You can then select "ALL" (when selected it turns black) or whatever other mailbox you want to search.

@henryec3: Does Sonoma have a higher version AppleMail?
I'm fully updated on Monterey and have Version 16.0 (3696.120.41.1.4)
Attached images is what I see: when I start to type in the searchbox, this line slides out from the left and I can select 'ALL'.
