Activities: Mountaineering, Trail Running

Why are there no activities like mountaineering, and trail running in the activities app? Apple showed them in the AWU ad. I'm mote than disappointed.

The Activity (upper case "A") app simply records your level of activity (exertion) as Minutes of Exercise, or Energy Used. These are valid for all forms of exercise. Specific types of activity (lower case "a", the type of action you are doing) are found in the Workout app.

Note that the Workout app might not have a specific named entry for every type of activity. For example, Trail Run is simply a sub-type of Outdoor Run, and the app doesn't care whether you are on trail, on road, or lapping a sports track.
