What happens if I click "Stop Using Apple ID" for "Apps Using Apple ID"? Will it delete my account, information, and data from that app or just Apple?

Whenever doing this, will your previous account still have the private relay email or will it be changed over to my Apple ID email? I am unable to get important emails because of this feature and do not want to risk losing them forever.
