When going to print, I get the printer selection screen, select my printer, and as soon as I go back to the print number of copies screen my printer disappears. It does not matter how many times I select my printer or if I restart my iPhone, it disappears from the printer selection field an I cannot print.

I had the same issue. I have updated the firmware on the printer and was able to resolve the issue for myself. My current firmware version is 22.07, upgrade from 1.06 (I think).
Menu > System Management > Update Firmware.
It can update OTA via Internet connection.

I used reset in the printer setup. And then reinstalled current firmware. That corrected the issue.
