remote access and control iphone 12 pro

I have an iPhone 12 and I need to fix it in a position to take photos regularly as part of a fruit growth observation project.

Can I access it remotely and control it to take those same photographs, while the device is outside the central computer's Wi-Fi network?

I preferably use Windows but there is the possibility of purchasing another iPhone/Mac.
