I have some lectures and music on my Mac I'd like to listen to on my iPhone or iPad when I'm not connected to wifi. Would it be better to take my music out of iCloud and synch manually?

If you use iTunes Match or Apple Music you can stream anywhere or download matched music directly to your device. If you do not use either, then you need to sync manually.
