How to disable HDR on two monitors simultaneously (Mac Studio M2 Ultra)

Perhaps a silly question but something I'm struggling with.

I'm trying to use a new Mac Studio M2 Ultra to colour grade video and would like to have 2 HDR-capable monitors connected simultaneously. The problem is, to gain full manual controls over the displays and calibrate them accurately, presets (and HDR) habe to be manually disabled through the Display settings in System Preferences. It seems this control is only enabled for a monitor plugged in directly with HDMI to the Studio's single HDMI port. Displays plugged in via dongles to USB-C won't display any option for disabling HDR. Any ideas or advice?
