How do I backup to iCloud without using "Documents & Desktop" or syncing?

I turned on iCloud thinking that it would back up my data. I didn't realize it would actually remove my Documents folder from my Mac and make it inaccessible when I was not online. Super annoying, since I travel a lot and I often don't have access to the internet (by choice!).


So I downloaded my Documents folder from iCloud (I think, it is really difficult to tell wth is actually happening), but now I've noticed that the folders within the Documents folder have been rearranged, files are in the wrong places, and quite a lot of content seems to have evaporated completely.


I can't express in kind words how frustrating and disappointing this is. I thought I was doing a good thing.


I don't care about syncing. All I want to do is backup my Documents. Is that so much to ask?

Well that is what you enabled, is icloud syncing whether you care about it or not.
