Dont want to clutter the cloud with all folders n mac only want to select few folders

You can sync selected folders by turning on iCloud Drive (but not the Desktop and Documents option) and then moving the folders that you want to sync to the iCloud Drive folder in Finder.
You can access the iCloud Drive folder via the Finder sidebar and the Finder "Go" menu.
