How do I turn off auto play on Apple Music?

Whenever I get into my Jaguar XF, Apple Music starts up. This is the same whether I'm using CarPlay (I had a CarPlay module fitted, mainly for navigation) or just the Jaguar system.

The Jaguar support forums tell me this doesnt happen with Android, that it's an Apple Music thing.

How do I turn off Auto Play? Or if need be how do I delete Apple Music from my iPhone 11? There seems to be no option to do this?
