When playing music on Mac, I can set up the stop time for a particular music, but the song simply continues to play beyond the set stop time. This seems to be a bug that has not been addressed.

As long as this isn't a protected file you could try converting to a new file to obtain a properly truncated copy. See Convert music file formats in Music on Mac - Apple Support. You can convert to the format as the source file.
