as an example: if I select open file, in pages. it only shows recent folders with no other chose. I'd like to be able to select a different folder other than most resent. how do I do this?

On the Open File chooser toolbar, click the first button with a down arrow and select Show Sidebar. This will give you a jumping-off point to visit other folders. On that same drop-down menu, there is also a choice of Icon, List, or Column views which you can toggle between using cmd+1, cmd+2, or cmd+3 respectively. You can also click on that topmost selector to access other folder locations.

Remember that Pages will remember the last folder in which you saved a document and will not change that location until you change it in the next save operation.
