Turn off 'hide my email'
I've accidentally turned this feature on and I don't want to hide my email, how do I turn it off?

I've accidentally turned this feature on and I don't want to hide my email, how do I turn it off?

Hide My Email is part of a subscription iCloud+ and can't be turned off as such, but you can delete the alias email addresses created by Hide My Email and therefore case to use them.
You can control this in iCloud Settings on your Mac: Settings > [Your Name] > iCloud
In MacOS 15 Sequoia you would then click on Hide My Email, but I can't recall in MacOS 13 Ventura if it is the same.
When the Hide My Email settings opens choose the email you wish to delete. This will show some details about the address and also offer the button Deactivate this Address.
However, if you mean that you turned on Mail Privacy this is controlled in the Mail application. Open Mail, go to Settings in the Mail Menu bar, then the Privacy tab. The first option Protect Mail Privacy can be activated or deactivated by adding or removing a tick in this box.
