I want to translate text that is in an email on my iPad. Usually I simply copy/paste and have no problem. This time it doesn’t let me. All I can do is press & hold to get a menu that lets me ‘copy’ the text in my email message. But when I try to paste the text I to Google Translate, it won’t come up on the screen and no where does it say, “paste’ to tap.

Have you considered using the iPad's built-in translation feature? Simply highlight the text that you wish to translate - and select the translate action from the available actions...
This OS-native feature can be used with Mail, web-pages and many other Apps.
