I am using GarageBand 10.4.11 and trying to create a simple drum backing track for live use but I can't seem to do it without having the metronome on for the whole track nor can I change the sound used for the count in. Any help would be greatly appreciated>

You can create your own count-in loop with musical typing.

Or, you could record the metronome onto a track and trim that track to only one measure.
