I understand that that the software on older iPads cannot be updated

I have to rely on WiFi to use mine as my SIM was cancelled when my ex left me. Happy to purchase a more recent one but concerned that the apps I’ve been using for years can’t be transferred without a SIM

As Mr. Brewer said, you do not need a cell connection, or even a SIM at all, to connect to the App Store. Nothing you purchase from Apple's App Store, iTunes Store or video store are ever tied to your specific network connection. Connection to the Internet via Wi-Fi will be just fine.


However, you'll want to confirm that your older apps will still be available and will support the newer versions of iPadOS. If the apps are very old, they may well no longer be available or updated to work (or work properly) with a newer iPad and its newer version of the OS.

Older iPad models cannot be updated to newer iPadOS versions, correct.


Apps require specific ios or iPadOS versions, as well.


Wi-Fi works for iOS and iPadOS updates, and works for app updates.


You have the central limit here backwards, though. Wi-Fi can update all. Use of cellular (SIM or eSIM) can block larger updates, as iOS and iPadOS updates and larger-app updates are not available via cellular prior to 5G cellular and a 5G cellular plan. Tomuse cellular, you’ll need a 5G plan, 5G coverage, 5G iPad, and a sufficiently data cap for updates vis cellular. Otherwise, Wi-Fi is needed for iOS or iPadOS updates, and for larger-app updates.
