I have multiple ATM and Visa cards from the same bank and I never know which one I'm paying with except the one I have as priority. I wish it was possible to give each card a label or name to easily distinguish it and not get the debit account wrong

The bank cards in Apple Wallet are controlled by the issuing bank. The banks provide the art work and Apple does not have the ability to add or alter the cards. Please raise your concerns with the issuing bank. Sorry.
Each card should show the last 4 numbers for it. That should enable you to identify them.
For a clear way or name, you will need to tell your bank to add those. Apple only displays what the bank provides.
