Problems with language and text font settings on MacBook Pro M3

My 16" MacBook Pro M3 has had a problem from the day I first used it with the Language and text font settings. I initially set the region to the U.S. and the language to English (US). The "Text font" on the "FONT" screen under Format has always shown "DengXian (Body Asian)" and "Latin text font". When I asked Apple Support about it, I was told not to worry, that it made no difference. On several occasions, the spellcheck/grammar are in a different language and I repeatedly have to reset the language default to English (US). Today, the spellcheck was in Italian. I went into Language and reset the default to English (US). Then, the same Word document was suddenly showing added spaces, etc., and when I checked the Language, it was set to French. This has been an ongoing problem since purchasing the MacBook Pro M3 in April 2024. Has anyone else had similar problems or can anyone provide any help in solving it?

Are you talking about Word for all of that? It has its own spellcheck settings and font settings, it does not use Apple's. The best forum for problems with Word behavior is
