I have an iPhone 14 Pro, and after updating to iOS 18.1.1 today, I've noticed that the Health app keeps crashing and is now virtually inaccessible. I have tried restarting my phone and offloading the app, but nothing seems to work.
I would appreciate any assistance with this issue.

Long press the app and remove/delete the app and download it from your Apple App Store.

Initially, I was hesitant to uninstall the app because I needed to unpair my Apple Watch. However, I eventually did uninstall it, and that resolved the issue.
