I've paired and unpaired the devices, reset and restarted both of them, and toggled the screenshot button, yet nothing happens. Screenshots only appear on my iPhone after restarting my Apple Watch, and even then, they only show up for a short time before stopping again. What should I do?

Everybody having this issue should use the Feedback link to tell Apple directly about it. Apple does not follow these communities, so this is the only way to make them aware of software problems.
I hate this. I miss it. Until e few days ago it worked perfectly for me and I use it multiple times each day. The upgrade to 18.2 ruined the feature for me.
Just mention your current watchOS and iOS version in the description for your issue. It takes some time until all Support pages are updated.
Fingers crossed that one day it’ll be fixed and screenshots sync automatically like they should.
It will apparently be fixed in the next release of iOS. See the Reddit thread
Force restarting both devices is a temporary solution.

To force restart your watch, press and hold the Digital Crown and the Side button together for about 10sec, until the Apple logo comes back again.
According to other users, Apple seems to be aware of this issue, and may address this in an upcoming watchOS update.

Which iPhone do you use?
I have no issues, syncing screenshots from the watch, using my iPhone 12mini (iOS 18.2) and the Ultra 2(watchOS 11.2)
In the WatchApp/Settings/General/Enable Screenshots should be switched on, and in the Photos App on the iPhone ->View Options->showing Screenshots as well.
I use an Ultra 1 and a iPhone 16 pro max. These settings don’t help in my case.
Any restrictions set up in Screen Time on your iPhone, or a profile installed?
Did you try to set it up as a new device after erasing and paring it again to your iPhone?
No restrictions. No screen time, or profile.
Did a new pairing and setup from scratch. Didn’t work.
yes. It is connected via BlueTooth and WiFi. Green icon of phone is there and I can make the iPhone beep via the watch.
