I will be. working in an app. or. a browser and suddenly all screens/windows disappear (and desk top takes over screen) . Can get them back easily by clicking on desk top. It is. just VERY irritating. Also sudden. zoom to huge print in the browser. Have to reset the zoom under 'view'

What Barney said. This is the setting that you need to change. Switch from Always to "Only in Stage Manager". And, if you are like most users, turn Stage Manager off. IMO it does not help at all, it kind of reduces the Mac to a glorified iPad - not even that. Even the iPad can have more than one window open at once.

The first sounds like Mission Control, Show Desktop. I can’t remember exactly, but I think clicking the Desktop will activate that. There is a System Setting that disables that if not in Stage Manager. You can also set a gesture or Hot Corner to Show Desktop.
