Storage space on iPhone and iPad growing exponentially. Migrated Notes from Evernote and have been adding many new notes daily since last September. I am afraid to lose my 16,932 notes if I do the wrong thing on the IOS devices. I still want to be able to view notes that are in iCloud and the notes folder structure while using IOS devices. I wanted to verify that the following advice would work: [ Go to Settings > Apps > Notes > Notes Accounts > iCloud > Sync, and turn off sync to iCloud ]

Phew, glad I asked. Thanks. Wish Apple Notes worked like Evernote and stored locally only the folders you designated and still had access to all Evernote Folders & notes. Really like Apple Notes but wish I had not moved from Evernote last September; still have all my 10+ years of Evernote available in Evernote Free but finding all my additions to Apple Notes for the last 5 months and copying to Evernote is a huge task. Evernote is EXPENSIVE. Note to future self; leave all Evernote notes that you don't need immediately on Evernote [ you can access them in Evernote Free but can only add one note a month ] and start fresh with Apple notes. Looks like ~17K notes is no problem for Evernote but a big issue for Apple Notes.
