Remove a person's name from their texts and only show their phone number?

for weird legal reasons, I need screenshots of texts with the person‘s phone number, but not their name. Right now, their name is on all their texts, of course. When I remove their name from contacts, what comes up on the text is “possibly so-and-so” and their phone number. I don’t want that. I just want the phone number to show. Any suggestions?
