Seeing all Apple Pay transactions
How do you see all transactions from all of the cards that are managed by Apple Pay?

The cards are not managed by Apple Pay. The cards are owned and managed by the bank that issued them. The banks only share limited data with Apple and Apple Wallet shared the limited information the banks do share.
