I have the same Dock with my Mac Mini Pro M4. I use a WD NVME drive and no issues. I would assume a WD 8TB would also work. I have also tested with Samsung 990 pro 1TB and no issue. If you are going to use an 8TB drive I would recommend you use a 5V 3A power supply to be make sure no disconnects. That is what I have done just in case I load up all the ports at once.

I would contact RAYCUE and get the recommended SSD drives from them. Am sure they have done tests to verify the operation of the device with various SSDs so they should have a list of drives that they used to test..

FWIW, without a recommendation from the manufacturer, getting reliable interface to the SSD or even have it work can be hit or miss. This can be true for any external DIY enclosure. As a general rule, "bargain" drives are the least reliable though getting popular brands are not a guarantee either. From personal experience, Samsung Pro series and WD Black series have seemed to be most successful.
