workouts app launches on its own—even right after I close it and then don’t move my arm, and don’t have any clothing or anything touching the watch.
SUPER ANNOYING.
i see several others have had this problem over the years.. how do I fix this?

Did you already try to force restart your Apple Watch?
To force restart your watch, press and hold the Digital Crown and the Side button together for about 10sec, until the Apple logo comes back again.
Any chance your Action Button is set up to start a workout automatically when pressed?

Your workout reminders are also disabled?
Yes I have restarted the watch. No, it isn’t workout reminders as the app is auto launching even while I’m laying completely still (1 second after I close the workouts app.. it auto launches before I’ve even had a chance to lower my wrist or move any part of my body in any way).
I had this problem for weeks
Turned out my phone had turned on the ACTION BUTTON to workout and I wear a leather band
every time I bent my wrist it pressed the button to start an action
chamged it to none and it’s cured

That’s a great suggestion, but doesn’t work for me. My Action button is set to Ring/Silent. It’s so annoying. Sitting on the couch, or lying in bed, or eating dinner, my watch randomly starts a workout. It is very annoying.
If the Force restart did not work, unpairing the watch and setting it up as a new device would be the next step:
If Ingo2711's suggestion to unpair and set up as new (no backup) doesn't work then it sounds like faulty hardware.
