viewing recently added items
After purchasing songs from the Store, I can only view the Recently Added in Album mode, not by songs.

The pre-canned "Recently Added" playlist is a lame thing with no view options. You can make your own smart playlist called (for example) "Recent Additions," with a single rule like "Date Added is in the last 6 weeks" and set it for whatever view options you prefer.
