You do not say exactly what you have tried. Also, in order to avoid any misunderstanding, please note the difference between iOS and macOS.

The Canon PIXMA MP560 is not listed as an AirPrint-supported model in About AirPrint - Apple Support.

Canon printer drivers for this model are not available for macOS versions like Sequoia. In fact, the latest CUPS driver appears to be for OS X 10.11 El Capitan.

-> DOWNLOADS -> Software & Drivers -> 1. Mac -> 2. OS X El Capitan v10.11 -> 3. RECOMMENDED MP560 series CUPS Printer Driver Ver. 11.7.1.0 (OS X)

Whether such an old driver can be made to work with a newer macOS version would be entirely experimental.

Sometimes, a printer driver for another model or series from the same manufacturer will work.

There are experimental Gutenprint drivers for the Canon PIXMA MP560, but it is unclear whether this would work with anything later than macOS 10.14 Mojave.

As always, make sure that you have backup copies of all important files before testing anything. Software conlicts cannot be ruled out.

Be careful when looking for drivers on the Internet. There are a number of dubious "support" sites, often with misleading names. Download from a printer manufacturer's official web site, or from another trustworthy source such as Apple.

Apple's Image Capture as such may work for scanning, but would need a compatible ICA driver.

A paid third-party product for scanning (free trial version available) could possibly be of interest.
