How do I find Macintosh HD - Data volume for restore?

My Mac conked out yesterday. Tried rebooting and got the black screen with Apple logo, then a progress bar. After multiple tries, did a reboot with Command R and then it brought me to Disk Utility. I want to restore, but there is "none available" in the box asking me which volume to restore to. What should I do?

In recovery you need to use disk utilities to erase the drive then install the OS. You did not state which model of Mac which may help decide on which format to use when erasing. Use  Mac OS Extended (Journaled) for old mechanical drives or APFS for SSD drive.
