The Image Playground app bundle is part of macOS, and is associated with Apple Intelligence.
If it is a concern, Apple Intelligence can be switched off, though Apple has unfortunately also been re-enabling it at recent updates.
Note too that Apple Intelligence doesn’t include or control certain other machine learning features present within macOS.
Other apps that folks have occasionally wanted to delete include Chess app and Stocks app, among the dozens or hundreds of other potential candidates for deletion.
More generally, Linux and any of the BSDs are fine choices, and can be a better fit for your preferences to customize the install. I would recommend those or similar platforms targeting customizations here too, as macOS is most definitely not an appropriate choice for installations requiring customizations.
If you do decide to continue with macOS, what gets installed by Apple is what gets installed.
As for migrating from Windows, I would recommend forgetting everything you know from Windows. That way lies only frustration. Frustration because macOS is very different from Windows, with different expectations, different norms, and a completely different internal design. These differences including a system volume design with contents that cannot be modified by users. Nor by malware. Nor by anti-malware, some of which has had a history of trying to corrupt parts of macOS.
