RAM usgae stays above 50% according to parallels system monitor. Why? Macbook is brand new

Yoou are running a Lot of stuff! Two game hubs and Google Chrome and another web browser and Parallels!

how does "only" having about 10 GB RAM available harm you in any way?

What use percentage do you think it should be? You paid for the RAM why not use it? Unused RAM is wasted RAM.
