In my unlocked screen, the font at the very top is white (time, battery, WiFi, cellular status). The color in my photo is also white, so I struggle to read the top unless I’m in an app. Is there a way to change the color of JUST these items?

No. I would suggest not using a white colored wallpaper which would overlap and make it hard to read. I also suggest you submit feedback to Apple below so they know what you and possibly others want added in a future update.
