Rer: "Pairing Phonak hearing aides with iPhone 16 Pro iOS 18.3.2 - seems impossible!
I am in the process of trying to complete upgrade from iPhone XR to iPhone 16 Pro and cannot get hearing aides to pair. It seem as thought a number have had similar issues with other changes."
Am no expert in this area, yet your post to the community deserves some response.
Apple support provides a long list of"Made for iPhone" Compatible Hearing Aids.
Those paired hearing-aids can then use Apple's hearing device / accessibility / features.
Although a great many manufacture's models are listed, there are no Phonak Hearing Aids listed:

You may be ale to pair them just as an accessory through BlueTooth, yet would need an app for control.

Re: "The only visible pairing I can appear to achieve is LE_R-Phonak on the Bluetooth pairing
and nil pairing on the myPhonak app with continual instructions to try again".
Seems the hearing-aids firmware (and ,or app) may need updating for compatibility with your new iPhone.
Firmware can sometimes be updated through an app ... if you have a manual fot that hearing-aid model, there may be info. in that about updates. Alternatively, your hearing-aid specialist may have help or tips.
