Paramount+ has set the entire app as 12+, which is simple and effective.

For your request, the Paramount+ developers would have to modify the app to detect the tags associated with the particular streaming content, if that tagging is even consistently available. Whether they are interested and even can do this?

Here is an answer that is hopefully as clear as your question...

The streamed content itself is classified as being age or content-appropriate. If the App's Parental Controls are set to limit access, the App is designed to enforce the selected restrictions.

Unless the streaming App includes a mechanism where you can selectively choose to also allow access to specific content that you designate, the only method by which content that exceeds the configured restrictions can be viewed is to remove or change the restriction to a more relaxed setting.

Consider that individual content classification is not set by the streaming service - but is chosen by a regulatory body in your region/country.

Be aware that outside of Educational or Business/Enterprise settings, an iPad is effectively a single-user device. As such, parental controls set for the iPad will effectively be global for that device/user.
